Remove use of rich library

rich currently provides colorized output, which aids readability.

The purpose of this ticket is to remove rich, and replace it with some other library which provides colorized output.

Need to figure out what alternative library is suitable.

We have removed Typer, but removal of rich is still pending finding a replacement.
