More recently, I have recorded my videos using QuickTime and edited them using iMovie. It has enough capabilities to make a quick and scrappy video (which keeps it authentic). I am sure there are more sophisticated tools available, but this has worked for me. And sometimes, keeping it original and showing the gotchas is fine too. For a more professional-looking video, this is usually handed over to an agency. For a really polished video, we have recorded it in a studio and let them handle all the editing. So, it really depends on what your need is.

I have used Camtasia for a number of years in the past and have used a bit of ScreenFlow too.
