Mac MX series don't support AVX

Hi,

Mac with MX CPU (m1, m2 etc.) don't have AVX support. So the initial docker compose can't work on these systems, it needs to be overriden. I think it could be wise to add a disclaimer on this ressource: https://www.librechat.ai/docs/local/docker
