Fixed docker image versions

Currently, we use the latest versions of our Docker images. This hasn't been a problem because most of the services we rely on are stable. The only risky change we've made is using a custom theme for Keycloak. As you might expect, it introduced breaking changes, causing our login and registration pages to break.
