Bug: H3 headings are not showing on TOC

This sounds like this is not a bug, but an intentional design choice and default behavior in Markdown processors, depending on ours in Vitepress. We could:

1. Keep current behaviour as it's a standard like GFM (GithUb flavour).
2. See if we can change the TOC depth level in the Vitepress config object.

Will come back with what option 2 allows in Vitepress.
