Allow Symfony ^8.0

Why

To give the possibility of testing the next version of Symfony

Change the current ^6.4 || ^7.0 requirement to ^6.4 || ^7.0 || ^8.0 for "symfony/doctrine-bridge" and "symfony/framework-bundle" in composer.json

This is usually controversial. Because we would be claiming we support something that is undergoing heavy development, hence is going to change a lot until its release date. So it might work together now, but will be broken until Symfony 8.0 actually releases. I'm not a fan of "allow" either, it's "support". We are not just going to blindly open up the constraint without actually knowing if these go together.

If not allowed supported, it would be impossible to test the bundle with Symfony 8 in real life.
And there are always tests performed by the CI.

By the way, this bundle technically supports Symfony 7.4 already, which is the same state as Symfony 8.0

I agree it should be quite safe to allow ^8: Symfony 8 is not a moving target, everything deprecated is already cleaned up and I don't think we'll add new deprecations.

I like the approach taken in doctrine/orm where there is an open PR targeting the 3.6 milestone which revert the change allowing Symfony 8 which will be merged if the 3.6 stable release is done before Symfony 8 is out.

I like that. Let's do that. Because I remember that bundle does tend to break shortly before stable symfony release.

Don't wait up for me to open the PR though.
