I'm a Nixvim maintainer.
It looks like you have not yet settled on a solution to configure Neovim.

Would you be interested in a PR configuring Neovim with Nixvim?
With a few lines of Nix, we could have a sensible, 100% nix, configuration that can be easily extended by users.
