docs: wordlist collation alternatives

We've recently had a user run into an issue trying to utilize PrimerPrep, a tool we recommend in our lexical-models wordlist-collation tutorial, due to their inclusion of proper nouns in their data. PrimerPrep auto-lowercases words, causing friction for them. Are there other recommendations we could make that better fit such usage patterns yet are about as simple to work with?

I've raised an issue with PrimerPrep to ask for capitalization, but there's no guarantee they'll actually implement it.
