Add to hackathon project for beginners

From nf-core 2025 Core + Steering Retreat.

**Context:** Identify and add suitable tasks/projects to the beginner-friendly hackathon project list to encourage new contributors.

**Goals:**
- Curate beginner-friendly projects
- Lower barrier to entry for new contributors
- Improve hackathon onboarding experience
