Upgrade to Inference 1.1.0 (w/ Rerank API) (#389)

## Problem

Adopts version `1.1.0` of
[python-plugin-inference](https://pypi.org/project/pinecone-plugin-inference/1.1.0/),
which contains support for Rerank API.
