Node version bump

Is there a good reason that this project is pinned to `lts/Fermium`?

I ask this as the current release (`14.21.3`) is an annoyance working on an Arm64 Mac - there's no prebuilt binary, and compiling requires older (less than `3.10`) versions of Python.
