(change) Configure goreleaser to sign the releases

Requirements

Today the releases are not signed, in order to increase the security around the releases it would be great to be able to sign them.

To do this goreleaser is offering a way to sign packages https://goreleaser.com/customization/sign/#signing-archives-packages-checksums.

We should try to use it.
