  1. Updated Dockerfile to use the public.ecr.aws/sumologic/sumologic-otel-collector:latest
  2. Added examples with a kubernetes resource that up 2 instances of collector and tail the file logs
  3. Added a simple test case that tests using 2

Note
Need to add textencodingextension in sumologic otel distro as its used by tailing side car
