fix: Add missing config values to copy operation

Extends Config.copy_with_new_sdk_key to preserve application, hooks, plugins, event compression, anonymous context omission, and payload filter key settings.

• Config:
  • copy_with_new_sdk_key: Now also copies application, hooks, plugins, enable_event_compression, omit_anonymous_contexts, and payload_filter_key.
