Updates for the Spring 2025 Semester

Made the following changes:

• Replaced Dockerfile base image with rofrano/nyu-devops-base:sp25
• Removed Thunderclient in favor of REST Client from devcontainer.json
• Removed poetry in favor of pipenv
• Updated GitHub Action to use Codecov v5 action
• Removed some deprecated environment variables from Flask-RESTX implementation
• Removed the Vagrant instructions from the README.md and replace the with Docker instructions
